🇵🇭🇯🇵 Lomi Udon u2028Is there anything more comforting than a hot bowl of Lomi this rainy season? I wanted to experiment with my own version, by adding a few Japanese elements to the dish and of course some Maggi Magic Chicken Cube to really round out the flavor. I was really quite pleased with the outcome and highly recommend this for anyone looking for something warm and comforting.  Really, helps dislodge some of that phlegm and make me feel better all-year round! And grabe, noknokan talaga sa sarap! INGREDIENTS:u2028 Stock: - 200g shrimps, peeled and deveined - 200g clams - 3 crabs - 2 stalks leeks - Kombu kelp - 8 dry Shiitake Mushrooms - ½ cup of mirin - ¼ cup fish sauce - 1 cup water Soup: - Chicken oil for cooking - 1 onion, sliced - 1 garlic bulb, minced - 1 Maggi Chicken Cube - cornstarch slurry - 1 whole napa cabbage,sliced - 1 carrot, sliced - 3 beaten eggs - Pepper to taste Kakiage: - 1 small squash, sliced - 1 bundle enoki mushrooms - 1 carrot, sliced - ⅓ cup tempura flour - 1 sachet Maggi Magic Sarap - ½ cup tempura flour wu002F egg and water Other Toppings: - 1 Soft Boiled Egg - Fishballs - Onion leeks INSTRUCTIONS: - In a hot pan with oil, add your shrimp peels along with crabs, clams, onion leeks, kombu kelp, water, mirin, shiitake mushrooms, and fish sauce. Boil before bringing it to a simmer for at least 20 minutes. Strain stock afterwards. - Cook onions and garlic in chicken oil, and add the stock you just made. Add 1 Maggi Magic Chicken Cube, to add more depth in the flavoring, before adding a cornstarch slurry to thicken. - Add your chopped vegetables and some beaten eggs.  - To make your kakiage, add in a bowl your chopped vegetables along with enoki mushrooms. Tempura flour to coat, 1 Sachet of Maggi Magic Sarap, and water and flour mixture. Mix well until combined and fry at 165C until golen brown and crispy.  - Add cooked udon noodles inside a bowl and ladle on soup.Top with the seafood saved from making the stock along wu002F  fish balls, kakiage, and a jammy egg and top it off with some sliced onion leeks. Serve and enjoy!
